Another year has come and gone. The rollercoaster that was 2021 is now over and we can look forward to the new year and all it has to offer for the food service industry. As always, food trends are at the top of everyone’s mind as we kick off 2022, and we are no different! We love diving into the yearly trend predictions that will influence menus of all kinds.

**Throwback Treats**

As we head into the third year of the pandemic, diners are continuing to look for comfort in their meals. This means they are craving dishes that transport them back to a simpler, less stressful time, so owners and operators need to be ready to give them what they want! Don’t be afraid to have fun with it, deep-fry a PB&J, or turn a classic Chicken Cordon Bleu into a fun flatbread pizza. You are only limited by your own imagination!

Sourcing local ingredients has been an upward trend for quite some time, but we might start to see this become even more apparent with desserts. Say *so long* to the premade frozen lava cakes and *hello* to desserts that are composed of fresh, regional fruits or dairy products. The last few years seem to have been all about the sweet when it came to breakfast. Donuts, fruit-filled crepes, and over the top pancakes are now having to make room on the menu for items that favor salty rather than sweet. Breakfast empanadas are a great example of a savory breakfast selections that truly satisfy the taste-buds. Melted cheddar cheese brings together fluffy scrambled eggs, and crumbled sausage inside a crispy empanada wrapper for a mouthwatering breakfast experience.
